My understanding is it moves all the data from /dev/vdb1 to /dev/sda1 and deleted the original data.

I have /data volume made of /dev/sda1 (100GB) & /dev/sdb1 (200GB). I have done the mirroring with /dev/sdc1 (310GB) . But when i run lvconvert -o m /dev/datvg/datalv /dev/sda1 it removed /dev/sdc1. Not the /dev/sda1 and /dev/sdb1.

You can do this by mirroring lv wise.
